Potato Pancakes
One of those old holiday favorites... we had it on meatless days growing up. So when we were
discussing how to use up the potatoes, Grandma suggested these for a change and Ben got a lesson in the art of potato pancake making (and cooking without a recipe).
6 medium Idaho potatoes, washed and peeled
1/3 medium onion
3 eggs
Flour

Grate the potatoes and onions coarsely. Add the 3 eggs and then mix. While mixing, add flour until it get gooey. Dump everything into a colander and let drain. (The potaotes wil release water as they sit and we don't want that.
Heat 1/2 inch of olive oil to shimmering in a frying pan. Using a tablespoon, scoop the potato mixture into the hot oil. Cook until golden brown and then flip. Remove and place on paper towels to degrease. You'll probably need to add oil at some point. This is not a low fat dish.
Eat hot with sour cream and maple syrup.
