Filled Christmas Cookies

3 lbs flour
1 lb butter
1 lb Crisco shortening
6 eggs
1 yeast cake
rind of 1 lemon
4 tbsp sugar
1 tbsp salt
1 tbsp vanilla
1 pint sour cream

Fillings
1 can* almond pie filling
1 can poppyseed filling
1 can aprocit filling
1 pound walnut ground fine with 3 Tbsp sugar and enough milk to make a soft paste added.

Shift flour on to a bread board and add salt, sugar, lemon rind, vanilla, butter, Crisco, and eggs. Work everything together into a smooth dough. Refrigerate overnight. Coat board with 1:1 flour and sugar mixture and roll out into a 1/8 thick sheet. Cut into squares and drop filling in center. Fold two corners up and squeeze together.

Bake at 350 F until golden brown, about 15-20 minutes. Makes about 6 dozen.
