Gingerbread Cookies

1 cup sugar
1/2 cup water
1/2 cup dark corn syrup
1 Tbsp ginger (best if freshly grated but powder works)
2 tsp cinnamon
2 tsp cloves
4 cup butter
4 cup flour
1.5 tsp baking soda

Mix baking soda and flour. Shift.

Bring water with the sugar, corn syrup, ginger, cloves, and cinnamon to a boil.  Por over butter in a large bowl and stir until butter melts. Cool to lukewarm and add flour. Mix until a smooth dough is formed. Refrigerate overnight.

Let warm until softens. Roll out to 1/8" thick and cut out shapes. Sprinkle as desired. Cook at 375 F for 12-15 minutes until light brown.
