Greens that actually taste good
3 tsp olive oil
3/4 cup minced onion
5 minced garlic cloves
1/4 tsp hot pepper flakes
2 pounds collard greens, stemmed and chopped
1 cup chicken broth
1 cup water
1 Tbsp lemon juice
salt and pepper to taste
1 ham bone or 1/2 lb bacon, chopped up
Heat 2 tbsp oil until shimmering. Add onon and cook until brown. Add pepper flakes and garlic and cook about a minute. Add half the green and wilt. Add remaining green and wilt. Add broth, water, ham bone, and pinch of salt. Cover and simmer for about 45 minutes.
Remove lid and increase heat to drive off liquid. When greens start to sizzle, remove from stove and add lemon juice, and remaining oil. Salt and pepper to taste and serve.
