Sesame Tuna

2 pounds tuna (2 pieces)
1/2 cup sesame seeds mixed with a little chipotle
2 tbsp sesame oil
black pepper and salt to taste
2 tsp olive oil

Coat the fish with the sesame oil and lay on a plate covered with sesame seeds. Press down to get the seeds to stick. Flip over and do the other side.

Heat 1 tsp of olive oil in a flat non-stick pan until shimmer. Add fish. Cook until sesame seed is brown and the discoloration line is about 1/4" wide. Flip over and repeat. Serve with salsa.

Yep, the center was still red and cool....
