Poule Au Pot

We got this recipe from Cook's and  its a real easy way to cook dinner with little work as well as warm the house.
We tossed baking potatoes in the other oven this time, but rice also works. Add a green salad or veggies if you ran out of vitamins.

1  5 pound chicken, washed and dried
2 tsp sea salt
1 tsp black pepper
1/4 cup olive oil
1 onion, minced
1 head of garlic, peeled
1 stalk celery, minced
1 bay leaf
1 spring rosemary
1/4 tsp lemon juice

Heat oil in a large dutch oven until shimmer. Rub chicken with salt and pepper. Place in breast down in dutch oven and brown for about 5-6 minutes. Turn chicken over, dump in everything except the lemon juice, and brown another 5-6 minutes. Cover with foil, put the lid  on top of the foil, and cook at 250 F of the bottom rack of a preheated oven until the dark meet is about 160 F, just about 2 hour. Or you can just wiggle a leg bone, which will be loose.

Remove bird and tent for 20 minutes. Strain and degrease liquid from pot and add lemon juice to taste. Serve.
