Fishing Lake Texoma

We went up to Lake Texoma this morning to fish with Rex Bridges again. When we went out before 7, it was dark and surprisingly cold. It warmed up some as the sun rose, but the wind was still bitter. However the fishing was great: we limited out before 9 am, had everything by 10 am, and were at Mom's Cafe having breakfast by 10:30. (It's really a cafe in Pottsboro that does a great chicken fried steak and eggs.)  The stripers hit the shad constantly while we were out there: we all landed pretty decent sized fish. We also had a seagull that followed us with hopes of bait scraps. Every time we landed one, he'd swim up with hopes we'd share. When we got home, we de-veined and wrapped up about 120 fillets for the freezer. Dinner was, of course, fried fish.



 



Update for just for Marc:

3 pounds striper fillets
2 tbsp olive oil
1 tbsp black pepper
1 tsp salt
juice of one lemon

4 tbsp mayonnaise
8 tbsp pesto
1 tsp lemon pepper

Heat the oil to shimmering in a non stick pan. Salt and pepper both sides of the fish and add to the pan. Sprinkle top with lemon. Cook about 3 minutes and flip. Sprinkle top with lemon. Cook until just flaking. Serve with pesto tartar sauce
