Four Meat Meatloaf

Veal. Pork. Bison. Bacon. Need I say more.

2 pounds ground bison
1 pound ground pork
1 pound ground veal
1 large onion diced
4 cloves garlic
2 tbsp oil
4 eggs
1/4 cup fresh thyme finely chopped
2 tsp salt
1 tbsp ground black pepper
1 Tbsp Worcestershire sauce
1/2 Tbsp fish sauce
1 tsp hot sauce
1 tsp Rooster Sauce*
1 cup Greek Yogurt
2 cups bread crumbs
2/3 cup parlsey leaves, chopped

Heat the oven to 350 and heat oil to shimmer.  Cook onion and garlic until onion is soft and transparent. In a bowl, mix the three meats together. In another bowl, mix the remaining ingredients except for the bread crumbs and parsley.  Add to the meat and mix well, then add the onion mixture, the bread crumbs, and the parsley.  Mix everything until it is smooth and shape into a loaf. Set on aluminum foil on a flat rack in a roasting pan.

1 cup Ketchup
1 tbsp spoon Rooster sauce
4 tsp brown sugar
4 Tbsp homemade wine vinegar**

Mix together in a small sauce pan and heat stirring until smooth.

1 pound bacon

Caot the meat loaf with half the glaze and then cover with bacon. Bake at 350 for about 1 hour, then coat bacon with remaining glaze. Cook until it reaches 160 internally (about 10 minutes). Let rest and serve. Makes great sandwiches the next day.

* Rooster sauce is a Vietnamese chili sauce.
**  Mix 4 cups white wine with 2 cups apple cider vinegar with active mother, let sit 3 weeks in air, and add 3-4 more cups of wine.  After another couple of weeks, you can move to a large jar and store. Amazing flavor even from crap wine.
